Each month, members receive a hand-sealed jar of single-origin air with tasting notes on parchment. Open it once, breathe deeply, and own the moment a place exhaled.

Every jar is filled at origin, sealed within the minute, and contains nothing else whatsoever. We are extremely proud of this.

The house

It began just above the glass

Marguerite Voss spent eleven years as a wine sommelier before admitting the truth to herself: the part she loved was the moment before the sip, when the air above the glass told you everything. The wine, frankly, kept getting in the way.

She sold her collection, kept the jars, and went to the mountains. Second Wind now maintains forty harvest sites on four continents, each worked by trained gatherers who seal at origin and carry the jars down by hand. The cellar in Sonoma holds six thousand jars at a constant temperature, for reasons our cellarmaster has asked us not to question.

Our gatherers work at dawn, when the air is naive and easiest to catch. Each jar is sealed within sixty seconds of opening, a window we call "the breath."

Trust the nose

Our tasting panel evaluates every harvest across three dimensions: body, finish, and regret. The panel works blindfolded, in silence, from jars that are, we remind you, empty. Their consistency is remarkable and a little unsettling.

Air does not go bad, but lids can loosen, and a loose lid is a philosophical emergency. Our technicians carry calibrated torque wrenches and speak in reassuring tones. Each visit ends with a signed certificate stating that your nothing remains intact.

The plan covers unlimited jars, because once you own forty of them, you will want a professional involved.

The Cellar Club

Where vintages change hands

Twice a year, Reserve members gather to bid on jars that no longer exist anywhere else. The 1998 Grand Hotel Lobby went for four figures last spring. The buyer described it as "an investment," and his family has learned not to follow up.

The crown of the cellar remains the 2019 Pre-Everything Reserve, harvested in an ordinary office in late 2019. Nose of birthday cake, handshakes, and unearned confidence. Eleven jars remain. We open none of them.
